Hongos extremófilos aislados de nixtamal con potencial biotecnológico

Abstract

Enzymes produced by extremophilic organisms are a relevant topic for biotechnologists because they possess hydrolytic activity and are useful for industrial, agricultural, and food engineering. Many of these organisms thrive in extreme environments, such as nixtamal, which by its nature is an extreme alkaline environment. In this work, extremophilic fungi were isolated from nixtamal and their enzymatic and antagonistic activity against mesophilic fungi was evaluated. Samples of nixtamal were collected from rural communities in Perote, Veracruz. Different morphotypes were isolated on Destroxa Potato Dextrose Agar from corn grains and nejayote. Proteolytic, amylolytic, cellulolytic, lipolytic activities, and antagonistic capacity against Trichoderma harzianum, Fusarium oxysporum, F. solani, Aspergillus niger and Colletotrichum gloeosporioides were determined. Among the eight isolated strains, FBX008 exhibited the highest antagonistic activity against the tested species, and FBX004 was active against T. harzianum and F. oxysporum. Since the strains were isolated from an extremophilic environment, the enzymes produced by these fungi are considered to be a potential source for industrial use.
